This book contains about 7,000 recipes, including over 2,600 which are only to be found together in this book. Its aim is to present, in brief and handy form, as many recipes as possible, both old and new, with which every skilled cook should be familiar with. Whilst each recipe occupies only a few lines, the details of its preparation are given in their natural and logical sequence. All chefs will find "Le Répertoire" an invaluable help . on the other hand, Hotel Proprietors, Directors, Restaurateurs, Maitres d'Hotel, managers, Head Waiters, Cooks and Butlers will find "Le Répertoire" a most useful guide to the ingredients and methos of preparing those dishes which should grace the best tables.
A rare find indeed.
It is in fairly good condition, and is intact with no looses pages. the cover a little grubby & there is minor handwriting inside, Chefs name & a personal note written on the back page. What is truly unique about this is the way it is indexed (see pictures)

DeiseDan says 04/01/2012 10:19 pm (4 months ago):Hi turtleback At the moment this is packed away (for over xmas etc) I'll have to check for certain, but there is no dust cover & I'm fairly sure it says 13th edition somewhere inside, but will have to dig it out to check for certain, hope this helps for now?

The story here is that originally turtleback offered & in the course of the PM's he asked me if I could wait a week till he had the money, no problem, after that, he apologised for the delay and said he would be in touch. the last I heard is he asked me to hold it for him till the 17th feb, which I initally thought ok, but now as there's other interest, I can see that it's not really fair on ye either, but I'm trying to stay within the rules, can you see my dilemma? Ideally I'd just rather have it gone.......
