What would you recommend for locking an electric bike? Perhaps a large version of this cryptonite mini? Interested.

@squidgez: dont have a large version, I have 1 mini 7 left in stock with Flex cable attachment. which is slightly bigger.
you can go to bikebits.ie and click on half price sale tab and compare the only two Kryptonite locks left.
with regards to lock security for bike you need a decent middle to high range quality to deter or make it difficult and kryptonite do that and it stops most people with hammers and bolt cutters. always lock your bike in high visibility secure area. No lock is going to stop 2 men, a van and battery angle grinder when out of sight.
